Rajasthani Kadhi

Kadhi  is a spiced yogurt based sauce and is thicked with gram flour.Kadhis are naturally cooling as they are made with yogurt and is excellent during the summers and often made in North Indian homes.  You can serve the Kadhi with steamed basmati rice, roti aur vegetables.
Kadhi recipe:
Prepration time :10 min
Cook Time: 20 min
Serving: 2 members
Ingredients: Measuring cup used 1 cup =250 ml.

  • 1 cup sour full fat curd ( khatta dahi or yogurt
  • 2 cups of water
  • 2 tablespoon besan ( gram  flour)
  • 1/4 teaspoon tumeric powder( haldi powder )
  • 2 tablespoon oil
  • 1/2 teaspoon mustard oil
  • 1/4 fenugreek seeds (dana methi)
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/2 teaspoon hing ( asafoetida)
  • 2teaspoon red chilli powder
  • 1-2 dry red chilies ( sookhi lal mirch)
  • 8-10 curry leaves
  • 2 green chilli
  • 12-15 garlic
  • 1 onion (chopped).
  • 20-25 methi leaves (sookhi methi leaves )
How to make recipe
    1.  Mix the above mentioned ingredients (besan, curd and water) including salt and haldi till smooth in a pan. No lumps should be there now add green chillis in it.  
    2.  Keep on a low flame and stir often for about 5-6 minutes till the gram flour on besan gets cooked and the Kadhi is another thick nor thin.
    3.  Keep aside covered.
    4.  Heat oil in a pan. Add the mustard seeds and cumin seeds along with the kari pata.Let the mustard seeds start popping and crackling add fenugreek seeds.
    5. Stir red chilies and add asafoetida.  Fry for a few seconds till the red chilies darken a bit.
    6. Now add paste of garlic and add some onions now add some haldi , salt, Red chilli powder mix it well.



  • 7 .Pour this tempering into the Kadhi.
    8 Cover and let the tempering flavours infuse with the kadhi and cover it for  5-6  minutes.  serve this     hot kadhi with phulkas and steamed rice.
