A unique and Popular brinjal recipe. It is known for its thick gravy and stuffed brinjals. For this recipe we need to use baby eggplants or small eggplants which is easily available in Market. So, let's start with the recipe.
(Ingredients):
• 8-10 Eggplant / Brinjal• 1 Tsp Oil
• 2 Green Chillies
• 8-10 Garlic pods
• 2 Chopped Onions
• 2 Tsp Curd ( as required )
• 1/2 Tsp Cumin Seeds
• 1/4 Tsp Mustard Seeds
• 1 nd 1/2 Tsp Red Chilli powder
• 2 Tsp Coriander Powder
• 1/2 Tsp Haldi powder
• Salt as required
(Recipe):
- Wash the Brinjals , Slit them into 4 without breaking them.
- Add Curd in brinjals add Red Chilli Powder, Coriander Powder, Tumeric and Salt mix everything well.
- Heat Oil in a Pan add Cumin Seeds aad Mustard seeds.When they start Crackling add Onions, green Chillies and garlic. Saute them for 2-3 Mins.
- Now slowly Slowly add Brinjal masala in the pan. Now cook it for 4-5 Mins. Garnish with some chopped Coriander leaves and serve hot.
