This dish comes out straight from our RAJASTHANI cuisine. Onions are extensively used in each and every dish in Rajasthan. It's very rare that you come across a curry which is just made of onions. This is one of my favorite recipes which require some basic ingredients from your kitchen. The flavor of tamarind water with dry spices gives a mouthwatering flavor. Once you try this and you will never stop yourself to try this recipe again and again. So let's begin:-

Serving : 3-4 members
Ingredients :
- 8-10 Onions (small size)
- 1 Tbsp Oil
- 1 Cup Tamarind water (pulp)
- 1 Tbsp Sugar
- 3-4 Dry Red Chillies
- 1/2 Tbsp Cumin seeds
- 1/4 Tbsp Mustard Seeds
- 1 Tbsp Red Chili powder
- 1 Tbsp Coriander powder
- 1/4 Tbsp Turmeric powder
- Pinch of Asafoetida ( hing )
- Salt as per taste
Recipe :
- Peel the skin of onions and make half slit on both the sides of onion(as shown in picture). Make sure you don't cut the onions into pieces.
- Mix all the ingredients in Tamarind water add 1 tbsp Sugar in water.
- Now add onions in the Tamarind water and mix them well.
- Put some oil in a pan. Add dry red chili, mustard seeds, Cumin seeds, onions and lower the flame give it a gentle fry.
- Cover the pan with lid and cook it for 10-15 mins.
- Serve it hot with Roti/Chapati.
