During Summer season there are few green vegetables available in market. My today's recipe is a green vegetable with a little bit twist. As we all are know green vegetables are very healthy and what will happen if i add one more healthy ingredient with TAURI and that is MOONG DAL. This is a perfect example of healthy food.
Fine chopped Taurai (Ridged Gourd) mixed with Moong dal and Rajasthani spices to topple your previous taste of Taurai and enriched you with a wonderful flavour that lasts in both your mouth and mind as well.

To make this delicious recipe we will need this INGREDIENTS
  • 2 Cup Chopped Taurai (Ridged Gourd) 
  • 1 Cup yellow Moong dal
  • 1 Cup Chopped tomatoes
  • 1 Tbsp Garlic Paste
  • 2-3 Chopped Green Chillies
  • 2-3 Tbsp Oil
  • 1/2 Cup Chopped Onions
  • 1/2 Tbsp Cumin Seeds
  • 1/4 Tbsp Mustard Seeds
  • 2 Tbsp Red Chilli powder
  • 2 Tbsp Coriander powder
  • 1/2 Tbsp Haldi Powder
  • 2-3 Tbsp Chopped Coriander leaves
  • Salt as taste
  • Water as required

Recipe :

  • Soak the yellow Moong dal for 30 minutes so that they cook quickly.
  • Heat oil in a pan add mustard and cumin seeds when they start crackling add chopped onions and green chillies. After 2-3 minutes when onions turns in golden brown in colour add chopped Taurai in it. 
  • After 4-5 minutes when your Taurai becomes soft add 1 Tbsp Garlic Paste and mix it well now add some dry ingredients Haldi Powder, salt red chilli powder and Coriander powder mix everything well.
  • After 2-3 minutes add chopped tomatoes we will cook it till the Tomatoes sweat now add soaked (1/2 hr) 1 cup of Moong Dal.
  • Mix everything well add 1/2 Cup of water cover it and Cook for another 4-5 minutes on low flame. Garnish with chopped coriander leaves.
